A stunning joint which oozes flavour. From locally sourced grass fed cattle like all of Simpsons Butchers cattle this signature joint aged between 30-45 days can be cooked slowly so it falls off the bone or quite high so it is eaten medium-rare. With natural fats running through it to create superb juices which in turn make an even better gravy.

Storage: Keep refrigerated, consume within 2 – 3 days.
For best quality, freeze as soon as possible after purchase. Once frozen consume within 1 month. Once defrosted use the same day. Do not refreeze once defrosted.
Instruction for use: Oven cook from chilled. Preheat your oven to 230°C / Fan 210°C / Gas 8. Place in the centre of the oven and roast for 20 minutes, then reduce the temperature to 160°C or 180°C without a fan(gas 4). Continue roasting for 15 minutes per 500g reaching a core temperature of 52°C before resting for a medium rare joint. Check food is piping hot. If cooked rare there is a small risk that harmful bacteria may be present. All cooking appliances vary. This is a guide only.
